If you find that there is quite a bit of excess petal around the base (this is what I had), don’t worry, just cut the excess petal away and neaten as best as possible. It may look a bit messy at this stage, but this will be covered with the calyx. Take a piece of white florist’s tape (giving it a little stretch to activate the in-built adhesive), then starting approximately 1.5 inches from the top of the three wires, tape the three pieces together. Roll paste out very thinly and cut out two shapes with the smaller cutter, and two shapes with the larger cutter. Working on the smaller pieces first, thin the petal edges all round with either the ball tool, or the end of the rolling pin. Then, using either of these tools, ball each petal to curve inwards – do this along one side, then turn paste over and ball the second side. To make one fully open peony, start with the centre: Take three wires and put a hook in the end of each. Take three small balls of white paste approx 3mm diameter, shape each into a cone and flatten slightly. Curve the tip and place the hooked end of a wire dipped into glue, into the base of each. Cover the top of the ball with one of the veined petals Use the wide end of a dresden tool to gently frill the top edge, then use the thin end of the dresden tool, to carefully run it over the surface of the petal. The secret to our method is in creating perfectly cupped scalloped petal tips and attaching the petals whilst still pliable so the flower can be easily molded into the perfect cup-shaped peony in your hand.

This first row of petals won’t cover the styro ball completely, but the later rows of petals will so don’t worry about that at this stage. Paint edible glue on to each of the petals from about half-way down to the petal right down to the pointed end. For the third row of petals, move onto the next sized cutter and cut out 8-10 more petals. (You might not use all 10 but better to have them cut and prepped in case you do).This is a very close petal, so you can brush the edible glue all over the petal following steps 10 - 12 and cutting away any excess as per step 11.
